Starch sodium octenyl succinate is prepared by treating starch with octenyl succinic anhydride (succinic acid and octanol). The ingredient of SSOS is modified acetyl modified starch ester. It is used as emulsifier, stabilizer, thickener and microcapsule embedding medium.
